By completing the Dietary Manager Program at Suffolk County Community College, you’ll be prepared to obtain industry certification that will advance your career.

The program contains two modules:

  • Module I: Nutrition; Foodservice Operations
  • Module II: Personnel and Communication; Sanitation and Safety; Business Operations

This 120-hour online Dietary Managers Program prepares individuals for food service management roles. Students will be exposed to training in:

Program Pathways & Eligibility

There are two pathways. Depending on your experience, you will take either Pathway I or Pathway IIIb:

Dietary Manager Pathway I
No college degree and no prior management experience

  • 120 hours of online didactic coursework
  • 150 hours of supervised field experience
  • Quizzes, online coursework, and assigned projects

Dietary Manager Pathway IIIb
Two years of full-time non-commercial food service management experience

  • 120 hours of online didactic coursework
  • Quizzes and projects

Program Accreditation

The Dietary Manager Program has been granted full approval by the Association of Nutrition and Food Service Professionals (ANFP). Upon program completion, graduates are eligible for Professional Membership in the ANFP.

Who is eligible to enroll?

Any individual who has leadership potential and is presently employed in the food service industry may take this course. Supervisors, cooks and other dietary personnel who have demonstrated leadership potential are eligible to enroll.

Learning Objectives and Requirements

The Dietary Manager Program is unique in that it includes both classroom training and supervised field experience in such area as:

  • Organization
  • Personal management
  • Communication skills
  • Sanitation and safety

  • Standard and therapeutic diets
  • Purchasing techniques
  • Food production
  • Cost control

Students must meet the following standards in order to complete the program:

  • Supervised field trips
  • Quizzes
  • Class attendance and participation
  • An assigned project executed on the job under the guidance of the preceptor*

*All students are required to have a registered dietitian serve as preceptor for the 150 hours field experience.
